VidaViva Ecofood's fine herb olives are made from organic olives from the island of La Palma (Canary Islands), a world biosphere reserve and known as La Isla Bonita for its beauty and landscape diversity.

The agricultural areas are located especially in the village of Tijarafe, at an altitude of 270m to 800m and in areas with quite favorable agro-ecological conditions. After the volcanic eruption of 2021 has affected our plantations and crops, we hope that all the nutrient-rich ash, together with the island's clean air, incomparable mountains and water, and the many hours of sunlight will help improve the production and quality of our raw material.

After being hand-picked, the olives undergo a first quality control, which is carefully selected by hand to eliminate olives that are considered substandard due to defects. These olives are then soaked in brine until they lose their bitterness and acquire the flavour we want for our recipe.

Finally, the olives are rinsed several times, unsuitable olives are removed and all the other ingredients are added according to the recipe to finally obtain natural, healthy, tasty and nutritious olives. They are then hand-packed in glass jars which undergo a pasteurization process.

Properties of olives
Olives are a source of fibre, monounsaturated fatty acids, vitamins (A and E) and minerals. The fat content of olives is high but they are healthy fats, since they are mostly monounsaturated fats rich in oleic acid (omega-9) and, although in smaller quantities, they also contain omega-3 and omega-6.
