VidaViva Ecofood's gazpacha olives are made from olives organically grown on the island of La Palma (Canary Islands), a World Biosphere Reserve, known as La Isla Bonita for its beautiful and diverse landscapes.
The fields are located in the municipality of Tijarafe, at various altitudes ranging from 270 m above sea level to 800 m in areas that offer excellent conditions for agroecology. After our plantations and harvests were affected by the volcano that erupted in 2021, we hope that all the nutrient-laden ash, together with the island's pure air, its incomparable mountain water and its wonderful light with many hours of sunshine, will contribute to improving the production and quality of our raw materials.
After being harvested by hand, the olives undergo an initial quality control, in which they are carefully selected by hand, removing any that are considered unsuitable due to defects. They then undergo a process in which they lose their bitterness and achieve the desired flavour for our recipes.
Finally, the olives are rinsed several times, all unsuitable olives are selected and removed, and all the other ingredients are added according to the recipe, resulting in natural, healthy, delicious and nutritious gazpacha olives. These are then hand-packed in glass jars that undergo a pasteurization process.
